Quesadillas are the best POWER food (not so healthy though haha)

Sometimes after kitesurfing I can just feel SO hungry. You could whip up a simple pasta, but I recently discovered something way better! They are called quesadillas. Easy, quick and you can vary endlessly with the ingredients.

Quesadilla a la Lisa

My favorite quesadilla contains minced meat, bell pepper, corn, onion, Mexican chipotle bean spread, salsa sauce and loads of cheese. This is not the healthiest food, but it will give you a nice satisfied feeling after an intense session.

All you have to do is bake the minced meat. Then you put the chipotle bean spread on the tortilla, add cheese, minced meat, bell pepper, corn and onion and heat the tortilla in the pan. You’ll need 2-3 minutes per side. When the quesadilla is done you can add some salsa sauce on the top with extra cheese (if you are not on a diet ;)).

What do you need for two persons:

  • 4 tortillas
  • 100 grams of corn
  • 1 union
  • 1 bell pepper
  • 200 grams of minced meat
  • 100 grams of cheese
  • 4 spoons of chipotle bean spread
  • 4 spoons of salsa sauce

Pizza quesadilla

Crave pizza but got tortillas? No problem! You can make awesome pizza quesadillas with nothing but tortillas, tomato sauce, mozzarella, oregano and arugula. Just spread the tomato sauce on the bottom tortilla and fill it up. Heat for 2-3 minutes per side and you are good to go. This one doesn’t really fill you up though. It is more a snack.

What do you need for two persons:

  • 4 tortillas
  • 4 spoons of tomato sauce
  • 1 mozzarella
  • A pinch of oregano
  • 50 grams of arugula

Spicy chicken quesadilla

Bake the chicken and add the chilli flakes and salt and pepper. Then you spead the crème fraiche on the tortilla, add chicken, cheese, bell pepper, corn and onion and heat the tortilla in the pan. You’ll need 2-3 minutes per side. You can eat this version with salsa sauce but shriracha is also very tasty.

What do you need for two persons:

  • 4 tortillas
  • 200 grams of chicken filet
  • Dried chilli flakes and some salt and pepper
  • 1 union
  • 1 bell pepper
  • 100 grams of corn
  • 4 spoons of crème fraiche
  • Cheese
