healthy breakfast

Breakfast is my favourite meal of the day. I always choose a warm, filling breakfast that will provide me with enough energy to rock on into my day. I will share some breakfast inspiration with you guys that consist of cheap ingredients, are easy to make and that nourish your body. Enjoy!

Healthy Breakfast – Banana Pancakes

My absolute favourite. All you need is:

  • A banana
  • Three tablespoons of oats
  • One egg
  • A bit of coconut oil or olive oil to cook in

Mix all the ingredients in a bowl, heat your frying pan and pour a bit of the batter in the pan. Try to keep ‘em small because otherwise the pancakes break. Top it off with some extra fruit (I like blueberries or strawberries but I reckon all fruit will work) and enjoy!

Healthy Breakfast – Oats

Oats are really satiating and make a great breakfast. You can choose your own liquid to cook your oats in. What you need:

A liquid:

  • Almond milk
  • Soy milk
  • Rice milk
  • Normal milk
  • Water

Oats (30-50 grams)

Fruit topping of your own choice. Think banana, blueberries, raspberries, apple etc.

Pour two cups of liquid in a pan with ¾ cup of oats. Wait till it boils, keep stirring and – depending on how firm you want your breakfast to be – pour your creation in a bowl. You can top it of with all kinds of fruit, seeds and nuts.

Healthy Breakfast – Omelette with pesto

For a protein rich breakfast you can go for an omelette. And this one has a special extra touch.

What you need:

  • 2 eggs
  • Some pesto
  • A couple of cherry tomatoes
  • A bit of coconut oil or olive oil to cook in

Whisk two eggs, heat olive oil in a pan and pour the eggs in the pan. Before you flip your omelette over you put pesto and a couple of cherry tomatoes (half) on one side of the omelette. Double it up and BAM, pesto omelette.
